Potato soup

SoupThis is a traditional potato soup from Extremadura, Spain. A very powerful soup cooked traditionally by herdsmen. It is a very easy recipe and very good for cold winter days.

Ingredients (serves 4)

4 potatoes

1 onion

1 garlic clove

1 teaspoon of parsley

Paprika (powder)

1 red paprika

1 green paprika

1 green paprika

2 leaves of laurel

100 grams of one day old bread

Olive oil

Steps:

  1. Peal and cut the potatoes in slices
  2. Cut the paprika and the onion in slices
  3. Fry a bit the potatoes, paprika and onion in a pot with olive oil. Add the paprika powder.
  4. After 5 minutes add 1 l  of water and the laurel
  5. Chop the garlic and parsley. Add it to the water
  6. Chop the bread in slim slices and add it to the water
  7. Add salt to taste.
