One of the most healthiest salads in Russian cuisine consists of boiled vegetables and pickles, with dressing of oil. You can improvise with the combination of ingredients, depending on what you like more:) The salad is light and perfect for summer days. Try it out!

Ingredients (for 5 people):

  • 4 small potatoes;
  • 4 small beetroots (or 2 medium);
  • 3 carrots;
  • Green peas (canned);
  • 300 g pickled cabbage;
  • 5 small pickled cucumbers;
  • Oil on your taste;
  • Salt and pepper.


Wash carrots, beetroots and potatoes. Boil them all together in a pot until they get soft. You shouldn’t peel these vegetables. Once cooked, remove the vegetables from the pot, put them on a side and wait until they cool off. After that you can peel potatoes, carrots and beetroots (it’s much easier now to peel and all vitamins are remain). Cut the vegetables and pickled cucumbers into small cubes. Add cabbage and peas. Mix it well and add oil, salt and pepper. You can also add fresh onion if you like. Vinegret is ready.
